The processing of the almond is made through a continuous process that goes from the orchards to the processing plant on the same estate. From here the products are shipped directly to the European markets.
As it is a food for direct consumption, the processing is made under very demanding quality standards that safeguard the hygienic and processing aspects.
Since the characteristics of the fruit vary, each variety is processed in an independent way. The almonds are monitored and tested at each stage of the process to ensure that a product of optimal quality is obtained.
The production is oriented to offer fruits with a quality of supreme and extra, in accordance with the standards of quality for final products determined by the norms of the USDA.
The calibres in the case of the almonds are measured according to the number there are in one ounce. Our fruit corresponds to the calibres of higher commercial demand. Around 85% of the fruit is between calibres 18/20 to 23/25.
Main stages of the process:
Pre Cleaning: in this first stage the fruit goes through a machine that eliminates the remnants of earth, stones or wood that can brought if from the field.
Once clean the fruit is gathered together in boxes to be divided in a machine, specially designed for this purpose.
When the nut leaves the splitter it is calibrated in order to separate the product according to its size.
Once cleaned and calibrated the fruit is inspected and selected manually, in order to assure an optimal quality.
During the selection process rigorous quality controls are carried out before being packaged according to the clients requirements. Commonly this packing is made in maxi sacks of 1000 kilos.
When the fruit is already packed and suitably labelled we prepare the shipping for each client.
